I found a great place for lease right in downtown, in the city i live in upstate ny, where i think an ice cream shop / gelato place will fit perfectly. There is an upscale private college, a theater that is open year around, summer festivals that draw close to 500,000 people (not kidding), and of course businesses that employ thousands of people. What strikes me is that there is no ice cream shop anywhere near all these attractions. There are many cafes but none that serves frozen treats. And this store is right in the smack middle of everything, super high traffic area, especially all the festivals during summer time, 4 major ones, take place right in front of this store.

Anyways, i have set my mind in opening a "frozen treat" store, however, will it be a no no for me to purchase freshly made gelatos and other treats from a local supplier/bakery and sell them in my store? There are two reasons for me thinking of doing it this way; 1) space of the store is limited to accommodate a large kitchen area, and 2) i don’t want to purchase thousands of dollars in equipment to make gelatos when someone else can make them for me professionally at a cost that will still allow me to make a decent profit. I know the draw back of this approach, major one being that what if my supplier goes out of business.

so i would appreciate some input as to is it acceptable to purchase goods from my supplier rather than me making the frozen treats? thanks

One Response to “Interested in opening a frozen treat business?”

  1. Avicenna says:

Yes it would be acceptable. Gelato is already a "comes frozen" item so some of the negatives about purchasing confections frozen (e.g. cannoli, other pastries etc) do not apply.
    Couple other points …
Making some food items for sale in house may give you the "hand-made" effect.
Make sure that you do a complete Breakeven Analysis and all pro-forma financials (especially to determine cash flow issues) prior to determining your final business format. And a full formal Business Plan, heavy on financials, is a very good idea.

For some gelato background you might look into the gelato franchise Gelato di Roma …

This is a restaurant franchise that makes it’s gelato every day in-house and is also a pizza shop. The typical franchise carries about 50 different gelatos every day.
